Hot snacks made from hard cheese: cooking secrets

We are used to the fact that we mainly serve appetizers for the holiday table cold: bruschetta, sliced ​​meats and cheeses, rolls, stuffed vegetables, and so on. But I somehow want to diversify this usual list, and today we will share with you the secret of how to prepare original hot snacks from hard cheese. The set of products for the first and second snack will be almost the same, only the cooking techniques will differ. And so for hot appetizers we need: hard cheese, eggs, water, spices, breadcrumbs, mayonnaise or sour cream.

We want to warn you right away that if you choose the wrong cheese for making snacks, nothing will work out. After all, cheese is the main ingredient in our dishes, so listen to our advice. For these hello snacks, you need to choose cheeses that are delicate in taste and have the ability to melt well, because that’s exactly what we need. The best cheeses are mozzarella (hard), Gouda, suluguni (just not too salty). Under no circumstances choose cheese with holes; this choice will make your work very difficult.

Let's start with the first snack option - cheese balls. In fact, it is very simple to prepare, but you need to follow our tips and then the snack will turn out perfect. Start by grating the cheese on a coarse grater. Then take the egg, beat it well, add salt and pepper. Take a deep bowl and mix the cheese and egg mixture. You can also add a tablespoon of mayonnaise, then the mass will hold better and it will be easier for us to make balls. When everything is ready, start making balls about 3 cm in size. When all the balls are stuck, put them in the freezer for about two hours. Then take a thick-bottomed pot, pour in a sufficient amount of vegetable oil and heat thoroughly. Take two eggs, beat with spices and sprinkle breadcrumbs on a separate plate.  Remove the balls from the freezer and, one at a time, dip them into the egg mixture and roll in breadcrumbs and add to the vegetable oil.

The second appetizer is very simple to make. Cut the cheese into strips, 2 cm thick. Prepare the egg mixture into which we will dip the cheese slices and add breadcrumbs. Before dipping the cheese into the egg and crackers (repeat twice to make the batter stronger), dip it in ice water. You need to fry the cheese in a large amount of vegetable oil.
