Tomorrow should be as healthy as possible and include all the components necessary for human health: fats, proteins and carbohydrates. Porridge, omelettes, sandwiches, pancakes - these are what are most often eaten for breakfast, but this is no longer interesting. Today we bring to your attention a delicious and world-famous breakfast option - eggs Benedict. In many cafes and restaurants this dish is on the breakfast menu. Traditionally, this dish consists of poached eggs, white roll or bread, bacon and Hollandaise sauce.There are many variations of this dish, for example, when the bacon is replaced with chicken or salmon, stewed spinach and greens are added. To prepare this dish we will need: eggs, white bread or bun, bacon or salmon, butter, white wine, lemon juice, salt, pepper. The preparation of our dish should begin with preparing the Hollandaise sauce, which takes the most time. This sauce is prepared in a water bath, so first prepare everything you need. We put a saucepan with a small amount of water on the gas stove and wait until it boils, then put a bowl on top in which we beat the yolks, salt, pepper and lemon juice, you can also add a little white wine, it will give an interesting taste to our sauce. Stir the sauce constantly, as it sticks to the bottom of the dish very quickly and easily. When our sauce begins to thicken, add a few pieces of butter to it. It is important that the oil is not hard, but at the same time a little cold. Mix the sauce very thoroughly until smooth and remove from the steam bath.

]The second step is preparing the poached eggs. This is a French technique for boiling eggs without their shells. To do this, you need to take a pan of water and wait until it almost boils, then add a spoonful of vinegar, reduce the heat a little, take a spoon and make a funnel out of the water, and when the water stops boiling, add the eggs. A very important point: break the eggs very carefully so as not to damage the yolk, it must remain intact.
