We advise you to start preparing the basics of our cheesecake. To do this, grind the shortbread into crumbs until they resemble powder. Melt the butter and add to the crushed cookies. Mix very well. The cookies should be wet so that our base does not crumble when cutting. Take a baking sheet and grease it with butter, then place the cookies with butter and make sides. Then seal the cookies using a round glass.A little advice: place the mold with our base in the freezer until completely frozen, then it will definitely not crumble after baking. While the base is frozen in the freezer, you can start preparing the main part of the cheesecake. Beat the cottage cheese with blender or you can grind it in a meat grinder, the consistency of the cottage cheese should resemble thick butter cream. Pay special attention to eggs, because a lot depends on them. Separate the yolk from the white, first beat the white with sugar until stable foam, and then beat the yolks with a mixer until noticeably lightened.If you do everything as we wrote, your cheesecake will be very soft and airy. You can also whip sour cream, and to prevent it from separating in our cheesecake use dry pudding, but this is at your discretion. If you use pudding, choose one with a creamy flavor, then the cheesecake will be even more enjoyable. In a large bowl, combine cottage cheese, yolks and sour cream, mix everything thoroughly. After this, you can add a spoonful of starch, we need it to stabilize it for dessert. Of course, you can use flour for this, but in our opinion, starch is better.At the end, add the protein foam and mix very carefully with a whisk, our task is to preserve all the airiness of the mass that we obtain thanks to the protein foam.

Now a very important point, baking our cheesecake, if you follow our advice, it will turn out amazingly light and tender. We recommend baking cheesecake and any other curd dessert in a water bath. Preparing a water bath, pour a sufficient amount of water into a large baking tray from the oven and place it at the very bottom. Place a wire rack on one or two levels, and on it a baking sheet with cheesecake, just do not forget to wrap the baking sheet with cheesecake with foil. Place the cheesecake in a cold oven and bake at a temperature of no more than 180 degrees. A very important point: do not open the oven door while cooking, otherwise the cheesecake will crack on top.
