Vegetable stew with beef
Another hearty dish with eggplant and meat.

Ingredients

  • Eggplant

    2 шт

  • Minced meat

    200-250 г

  • Carrots

    1 шт

  • Pepper

    1 шт

  • Potatoes

    1 шт

  • Onion

    1 шт

  • Garlic

    2 зуб.

  • Tomato paste

    1 ст. л.

  • Spices

  • Salt

  • Vegetable oil

Peel and dice the eggplant. Pour salted water and leave for 20 minutes.

Potatoes, carrots and peppers cut into small cubes. Onion and garlic finely chop.

Pour into deep skillet the oil, saute the onion and garlic.

Add the mince, stirring, simmer for a few minutes.

Add, carrot, pepper, stir. Simmer for another 2-3 minutes.

Then lay the eggplant, peremeshaem. Pour 1.5-2 cups of water, add tomato paste, spices and salt to taste.

Cover, simmer 20-25 minutes.

Add the potatoes. Stew until potatoes are done.

Stew served in a deep dish. This dish will go well with rice. BON APPETIT!
