Herring in tomato sauce with olives
I am a fan of Soviet culinary books. Though they are not as colorful as modern, and there are not many recipes that have now become iconic, but in those books assembled a great experience of the whole country. From mother-in-law I got a booklet 1958 publication titled "Fish and seafood". There I found a recipe for "fresh Herring in tomato sauce with cucumbers". I took as a basis, adding the olives and soy sauce.

Ingredients

  • Herring

    1 pc

  • Vegetable oil

    2 tbsp

  • Onion

    1 pc

  • Sauce

    200 ml

  • Pickled cucumber

    1 pc

  • Green olives

    8 pc

  • Soy sauce

    1 tbsp

  • Black pepper

  • Sugar

    1 tsp

  • Bay leaf

    2 pc

  • Brine

    50 ml

  • Lemon

    2 slice

  • Green onions

    1 tbsp

Cooking

Fresh frozen herring defrost completely. Remove the head and insides, have to fillet, removing the bones. Skin save

In a frying pan lightly fry the finely chopped onion

Here, pour tomato sauce (I have homemade sauce), a pickle, add sliced cucumbers and sliced olives. Add the sugar and Bay leaf

Pour in soy sauce "Kikkoman"

The sauce boil for 2-3 minutes on high heat. Herring fillets and season with pepper and place in the sauce. Simmer for about 15 minutes on medium heat

Put the hot fish with the sauce on a plate, serve with a slice of lemon, sprinkled with green onions. This dish can be completely cool and serve cold as a snack (similar to the fish in the marinade)
