Pumpkin baked Mexican
Very interesting version of cooking is not too beloved pumpkin. Eaten together with the peel.

Ingredients

  • Pumpkin

  • Minced meat

    300 g

  • Tomato paste

  • Vegetable oil

Cut off the pumpkin top, remove the seeds with a spoon. Inside sprinkle lightly with salt, pepper and leave for some time until we prepare the filling.

Boil the rice until soft, add to the finished stuffing. Chop the onion, chili pepper and fry in a deep frying pan in vegetable oil until onions are turned Golden brown, about 5 minutes. Add the minced meat and fry all together another 5 minutes.

A jar of canned corn to open, drain the liquid, add the corn to the mince, a couple of minutes to fry, add spicy tomato paste or ketchup and stew under the lid for 10-15 minutes. At this stage you can add to stuffing any other of your favorite spices.

Spread the stuffing in the pumpkin, cover cut earlier, cover and bake in a preheated 180C oven for 45 minutes. Here we have the result.
